Healthy Sugar Cookies (Grain free, Refined sugar Free!)
These healthy sugar cookies have just the right amount of sweetness without all the refined flour or refined sugar found in conventional sugar cookies.

Almond flour
Butter (softened)
Coconut Sugar
Eggs
Vanilla Extract

The Steps
Make sure to soften the butter on the counter overnight. Preheat the oven to 350F. Place butter and coconut sugar in a mixing bowl and use a hand mixer and mix together until well combined and fluffy.
Add almond flour, egg, and vanilla and mix well. Place in the fridge or freezer for 10-20 minutes to harden up and make it easier to roll out.
Remove from the fridge and place on a parchment paper with another parchment paper on top. Flatten with hands a bit before rolling out with a rolling pin - using the parchment paper to keep it from sticking. Roll out to 1/4 inch thickness or so.
Use a cookie cutter to carefully cut out cookies and place in the on a parchment lined cookie sheet. Bake at 350 for 10-12 minutes. They will firm up more as they cool!
Substitutions
The coconut sugar could be substituted for any other dry sugar such as evaporated cane sugar (rapadura) or a sugar substitute like xylitol or allulose.

1 cup almond flour
1/4 cup butter, softened
1/4 cup coconut sugar
1 egg
1 tsp. vanilla extract
Directions
Preheat oven to 350F.
Place softened butter and coconut sugar in a mixing bowl and blend until well combined and fluffy.
Add almond flour, egg, and vanilla extract and mix well.
Place in the fridge for 10 minutes.
Roll out between 2 sheets of parchment paper till about 1/4 inch thick and use a cookie cutter to carefully make cookie shapes.
Bake in the oven for 10-12 minutes.
Cool for at least 5 minutes.
