Tex-Mex Burger Bowl (GAPS, paleo, gf)
If you’re looking for an easy dinner that whips up in no time, check out this tex-mex burger bowl. It’s easily adaptable to accommodate different dietary needs and has tons of flavour.
Ingredients you’ll need:
ground beef or bison
onion
garlic
green peppers
chili powder
cumin
oregano
salt and pepper
tomato paste
bacon (optional)
cilantro, salsa, sour cream, guacamole or avocado, tomatoes, lettuce, shredded cheese, cumin sauerkraut, brown rice (all optional)
The topping options are endless. We added homemade sour cream (made it the same way we make yogurt), salsa, avocados, and shredded cheese, and a cumin flavoured sauerkraut. My pickiest child loved this dish and ate up all the leftovers when everyone else was tired of it.
TEX-MEX Burger Bowl
Ingredients
2 lbs ground beef or bison
cooking fat like lard or ghee
1 red onion, diced
2 garlic cloves, minced
2 green peppers, diced
1 tbsp. chili powder
2 tsp. cumin
1 tsp. oregano
1 tsp. sea salt
4 tbsp. tomato paste
8-10 pieces cooked bacon (optional)
Directions
heat skillet to medium heat. Add cooking fat, onion, and pepper. Cook until translucent.
Add garlic and spices. Cook until fragrant (a minute or so), then add tomato paste and ground beef (or bison). Cook everything together until the ground beef is cooked through (about 10-15 minutes).
Add in cooked bacon and cook for another few minutes.
put in bowls on a bed of rice, lettuce (or nothing at all!) and add your favorite toppings.
