No Bake Chocolate Fudge (GF, GAPS, paleo, SCD, DF option)
We are in post Christmas phase and with all the December events like Christmas parties and birthday parties (one of my children is a December baby), it was easy to get sucked in to the sugar craze that Christmas season has become.
This no bake chocolate fudge is super easy to make and is made with all natural sugars and none of the yucky stuff that the majority of sweets are made of. This chocolate fudge has no refined sugar, no gluten, no grains, and can be made dairy free if needed.
My kids and I ate up this no bake chocolate in no time at all but with how easy it is to make, I’ll definitely be making more throughout the winter. The healthy fats in it from the butter and coconut butter help to slow the absorption of the natural sugars leaving you without a sugar crash that you get from most other desserts (but still don’t eat the whole thing!). The fats are also nourishing so you can be sure you are getting a nutrient-dense dessert!
No Bake Chocolate Fudge
1/2 cup coconut butter
1/2 cup butter (sub coconut oil for DF)
1/2 cup honey (or maple syrup)
1/2 cup cocoa powder
1 tsp. vanilla
pinch sea salt
Directions
Soften coconut butter and butter on low heat on the stove. Stir to help this process along.
Once butter and coconut butter mixture has melted, remove from heat. Add honey (or maple syrup), cocoa powder, vanilla, and sea salt.
Once thoroughly mixed, pour in to a parchment paper lined baking dish (I used a 6 x 8 in dish) and pop it in to the freezer.
Let firm up for at least 30 minutes. cut in to small bars and store in the fridge or freezer. These no bake chocolate fudge bars will get soft so keep them in the fridge until you are ready to eat them.
